- Pre-heat cooking oil in frying pan, fry corn mixture little by little using table spoon or small soup spoon, turn them to the other side until both side turn golden.

The fritters were really tasty, I garnished them with coarse sea salt and more sliced green. Take care when pan-frying the fritters, because the corn kernels often pop in the hot oil. It's advisable to cover the pan with a mesh splatter screen. Because commercial chilli jam is usually too sweet and sickly, I like to mix it with fresh lime juice and some chopped chillies.
