Put the nori on a bamboo mat. Roll as you would sushi, pretending that the spinach is rice. Spread it out thinly on the nori. Arrange the carrots in a horizontal line on the side closest to you. Using the mat to help you, roll the sushi tightly, tucking the nori into itself to make a little spiral.
