Instructions to make maki sushi:
  1. boil the water
  2. add rice . remove from heat and leave until all water is absorbed.
  3. place rice into a bowl. don't use a utensil, dump the rice straight from the pot.
  4. combine rice vinegar salt and sugar in a sauce pan. heat on high until sugar is absorbed. note: swirl the pan to dissolve, vinegar shouldn't boil.
  5. pour vinegar onto rice, cut or fold ride with wooden spoon to mix vinegar. this will make the rice sticky.
  6. let the rice cool down.
  7. If you have a bamboo mat, cover it in cling wrap.
  8. dip hands in water and clump rice into a ball place on nori(seaweed) and spread it out.
  9. flip the seaweed so rice side is face down on the mat
  10. add your veggies, fish, whatever you like and roll your seaweed.
  11. press firmly once you complete one revolution to seal the roll. continue rolling and press firmly again at the end to shape the roll
  12. trim edges of the roll. cut in half then in half again.
