- Roll up the sushirice (step5) with the bamboo mat.
- Cut the roll into small pieces. It's done!
Always use fresh ingredients, especially if you're using raw fish! Kanpyo is made from dried shavings of calabash. Calabash is a type of gourd. Kanpyo is the typical filling of futo makizushi (thick rolls) sushi rolls. It is usually cooked and flavoured in soy sauce, sugar and mirin.
