The ingredients needed to make Mee Siam:
- Prepare 300 g rice vermicelli (meehoon) - soak in water for 5 minutes and drain
- Make ready 300 g prawns - peel and devein

- Take 1 cup chives, cut into 3cm length
- Get 1/4 cup dried shrimps, wash and chopped coarsely

- Make ready 1 1/2 tsp turmeric powder
- Make ready 3 Tbsp chopped ginger flower (Bunga Kantan)
- Prepare 1 stalk lemongrass chopped finely
- Get 3 bird eye chilies (if you like it spicy)
- Get Seasonsings:
- Take 2 Tbsp fish sauce
- Make ready 1 Tbsp soy sauce
- Take 1/2 Tbsp tamarind paste
- Take 2 tsp sugar
- Make ready 1 tsp chicken stock granules
- Prepare 1/2 tsp white pepper
- Prepare 2 cups water
Mee Siam is a Malaysian favorite often served during public functions. This spicy and flavorful dish comes with a variety of colorful toppings. Mee Siam is a spicy stir-fried rice vermicelli popular for breakfast, lunch or dinner. In Singapore and Malaysia, mee siam is often served at special events.
Instructions to make Mee Siam:
- Prepare all the ingredients!
- Heat oil in the wok. Lightly fry the dried shrimps and tofu but separately. Dish out and put aside.
- Stir fry the pounded ingredients and kaffir lime leaves until aromatic. Add prawns and fry until they are half-cooked. Dish out only the prawns and put aside.
- Add in seasonings and bring to boil. Then add meehoon and stir-fry.
- Mix in dried shrimps, tofu, prawns, chives and beansprouts. Mix them well for 3 minutes or until everything are cooked.
- Serve with cut lime at the side to drizzle if preferred.
It is garnished with shredded omelette. This Mee Siam is based on the Malaysian version - which is a hot and spicy dry noodle dish. There's also a Singapore version that's similar, but is served with a spicy gravy. Peranakan Dry Mee Siam is a local favourite that boasts a unique blend of sweet, sour, savoury I learnt to cook Peranakan Dry Mee Siam from a Peranakan friend who used to share her Mee Siam. My sister and I would walk to a market on the weekends to do some grocery and then we would stop by the hawker center to have.
