I omitted the oil as I never cook my eggs in oil but other than that I didn't change a thing.

- Get large eggs
- Get pizza sauce

Scramble in a preheated skillet (I used a liitle butter in the pan but you can use cooking spray) When eggs are almost fully done ( the should look shiny but not be fully wet) pat them down to cover the pan evenly (like a pizza crust) top with mini pepperoni and cheese. I scrambled the eggs, milk, s&p, green pepper, onion and a pinch of jalepeno until it was starting to set but not fully cooked.
Steps to make Pizza Eggs:
- Heat butter in small small skillet over medium-low heat. Once melted, crack eggs into pan.
- Once whites just barely start to set and turn white, reduce heat to low, spoon sauce over eggs and sprinkle feta over the top.
- Continue cooking until whites are almost completely set, add pepperoni, mozzarella, Parmesan and Italian seasoning on top.
- Continue cooking over low heat until whites are completely set, pepperoni is cooked and cheese is melted.
I spread a thin layer of cream of mushroom on the crust, followed by a thin layer of hot salsa. They are filling, and have enough "vitamin G" (grease) to soak up whatever is still haunting you from the night before. We used to eat these all the time when on ski trips- and they'd fill you up to get you going all day on the slopes. Unroll dough on pan; starting at center, press out dough to edge of pan, building up edge slightly. In a small bowl, whisk eggs, Parmesan cheese and seasonings until blended.
